Spicy Beef Curry Puffs
Curry puffs are a beloved street food in Singapore and Malaysia, famous for their crispy, flaky pastry and deliciously spiced fillings. Traditionally made from scratch, today I’m sharing a shortcut version using ready-made puff pastry to save time without compromising on flavor. With a rich, aromatic beef curry filling and perfectly crisp pastry, this easy recipe lets you enjoy the taste of your favorite street snack in no time!
INGREDIENTS
Ground Beef - 350 g
Potatoes - 200 g
Frozen Vegetables - 150 g
Ready-made puff pastry - 2.5 sheets (10 puffs)
Egg - 1
Sesame seeds - 1 tbsp
Cooking Oil - 3 tbsp
Onion - 100 g
Garlic - 3 cloves
Grated Ginger - 1/2 tbsp
Paprika - 1 tbsp
Turmeric - 1/2 tsp
Curry Powder - 1/2 tbsp
Chilli Flakes - 1 tbsp or to taste
Salt - 1/2 tbsp or to taste
Chicken Powder - 1/2 tbsp or to taste
Water - 1 cup
Using frozen vegetables for convenience
Cooking process
Using ready-made puff pastry
Fold into triangles
Applying egg wash
Ready after 15 minutes in the oven
Instructions:
Preparation:
Dice two small potatoes (200g) and one onion (100g)
Pre-heat the oven at 200’C
Making the beef curry filling:
Heat 3 tablespoons of oil in a pan over medium heat.
Add diced onions (100g), and sauté for 5 minutes.
Add minced garlic (3 cloves), and grated ginger (1/2 tablespoon), and sauté for another 1-2 minutes or until golden and fragrant.
Next, stir in the spices—paprika (1 tablespoon), turmeric(1/2 teaspoon), and curry powder (1/2 tablespoon)—and toss in some chili flakes (1 tablespoon) for an extra kick. Sauté the mixture for about 30 seconds, ensuring the spices release their aroma without burning. This forms the flavorful base for the spicy beef curry filling.
Next, add the ground beef to the pan and sauté for about 8 minutes or until it’s nicely browned. Season the mixture with salt (1/2 tablespoon) and chicken powder (1/2 tablespoon) to enhance the flavors.
Then, stir in diced potatoes (200g) and some water (1 cup), allowing the potatoes to cook for about 15 minutes or until they are halfway tender.
Once the potatoes are partially cooked, add the frozen vegetables (150g) and let everything simmer until the vegetables and potatoes are soft.
When the filling is perfectly cooked, give it a taste to adjust the seasoning. Your flavorful beef curry filling is now ready!
Set it aside and let it cool down completely before the next step.
Making the curry puffs:
To make the curry puffs, we are using ready-made puff pastry for easy, convenient option.
Cut the half-frozen pastry sheets into squares.
Place 2 tablespoons of the filling in the middle of the square and fold it into a triangle. Press the edges with a fork to seal the puff. Don’t forget to poke a few small holes on top to allow steam to escape while baking.
Brush the surface with egg wash for a golden finish and sprinkle sesame seeds on top for added texture and flavor.
Bake in a preheated oven at 200°C for about 15 minutes, or until the pastry is beautifully golden and crispy.
