Easy homemade Chinese style egg fried rice
Egg Fried Rice is a simple and flavorful stir-fried rice dish made by cooking rice with eggs, seasonings, and sometimes vegetables or protein. It is a popular dish in Chinese cuisine and many other Asian cultures, often served as a quick meal or side dish.
We love this dish because it’s quick, easy, and packed with flavor. It takes only 10–15 minutes to cook, making it perfect for busy days. Plus, it’s a great way to use up day-old rice, reducing waste while enhancing the texture. If you do not have pre-made rice, you can use microwave rice packets and it would not change the flavor! With just a few simple ingredients like eggs, garlic, soy sauce, and scallions, it delivers a delicious umami taste. It’s also budget-friendly since rice and eggs are affordable staples. The dish is highly customizable—you can add vegetables like peas or carrots, include proteins like chicken or shrimp, or tweak the seasonings with oyster sauce, chili, or sesame oil. Versatile and satisfying, Egg Fried Rice pairs well with everything from stir-fries to soups. Its warm, savory, and slightly smoky flavor makes it a comforting classic that brings back memories of home-cooked meals. In this recipe, we are using minimal ingredients with microwave rice packets for convenience.
INGREDIENTS
Jasine Rice (microwave rice packets or day-old rice) - 500g
Light soy sauce - 2 tbsp
Sweet soy sauce - 1.5 tbsp
Salt - 1/2 tsp
Sugar 1 tsp
White pepper - 1/2 tsp
Cooking Oil - 5 tbsp
Scallions - 40g
Eggs - 3 large (or 4 small)

COOKING INSTRUCTIONS
PREPARE INGREDIENTS
Chop some scallions (40g)
Beat 3-4 fresh eggs
PREPARE THE RICE
Microwave each rice packet for 90 seconds (or as per the package instructions)
Remove the rice from the packets and spread it out on a baking tray, breaking up any lumps.
Let it cool in the freezer for 30 minutes to ensure the rice is dry and cold before frying.
After 30 minutes, season the rice with light soy sauce (2 tbsp), sweet soy sauce (1.5 tbsp), salt (1/2 tsp), sugar (1 stp), white pepper (1/2 tsp). Mix well by hand to ensure every grain of rice is coated and seasoned.
STIR FRY PROCESS
Heat 4-5 tbsp of cooking oil in a large wok on high heat.
Add the white part of scallions (about 15g) and sauté for 1 minute
Add the beaten egg into the wok and scramble for 1 minute
Add the rice that we seasoned earlier and stir-fry on high heat for 3-4 minute. It is ready when the rice starts to pop
Top with the green part of scallions and we’re done!
