Today, we're making Pad See Ew, a quick and delicious Thai-inspired stir-fry dish that's perfect for a busy weeknight. This is a simple yet flavorful dish made with chewy rice noodles, your choice of protein (I've used chicken here), and a delicious sauce that you can easily whip up using pantry staples.

This recipe is beginner-friendly and takes just 15 to 20 minutes to prepare, making it ideal for those who want a tasty homemade meal without spending hours in the kitchen. Whether you're new to cooking or just short on time, this dish is sure to become a favorite!

Ingredients:

Chicken - 250g

Light Soy Sauce - 1 tbsp

White Pepper - 1 tsp

Gai Lan - 150g

Garlic - 4 cloves

Egg - 2 medium

Rice Noodles - 200g (dry)

Cooking Oil - 4 tbsp (Peanut Oil / Sunflower Oil / Canola Oil / Vegetable Oil)

SAUCE

Light Soy Sauce - 2 tbsp

Sweet Soy Sauce - 2 tbsp

Fish Sauce - 1 tbsp

Sugar - 1 tsp

This is a simple yet flavorful dish made with chewy rice noodles, your choice of protein (I've used chicken here), and a delicious sauce that you can easily whip up using pantry staples.

Instructions:

PREPARE INGREDIENTS

  1. Thinly slice some chicken breast (250g)

  2. Chop some gai lan leaves (150g), and seperate stems and leaves

  3. Mince some garlic (4 cloves)

COOKING PROCESS

  1. Marinate the chicken with light soy sauce (1 tbsp) and white pepper (1 tsp)

  2. Prepare stir-fry sauce by mixing some light soy sauce (2 tbsp), sweet soy sauce (2 tbsp), fish sauce (1 tbsp) and sugar (1 tsp) in a small bowl. Mix well so the sugar is well dissolved.

  3. Soak dry rice noodles in boiling water for 6 minutes (or follow package instructions). After 6 minutes, drain and rinse them under cold water.

  4. Heat up 4 tbsp of cooking oil in a wok. When the oil is hot, add chicken and stir fry for 2 minutes. Then take the chicken out of the wok and leave it aside.

  5. Remove half of the oil from the wok but save that oil for the next step. Saute garlic for 30-45 seconds then add gai lan stems. Continue to stir fry for 1 minute. Add two eggs and scramble them for 1 minute. Then add gai lan leaves and stir fry for 1 more minute. Take everything out of the wok and set aside.

  6. Add back the oil that we removed earlier into the work. On high heat, add rice noodles. Pour 1/2 of the sauce and coat noodles with the sauce by tossing with a tong. Spread the noodles and do not touch or move them for 1 minute. This will caramelize and char the noodles at the bottom.

  7. Then everything back into the work including the rest of the sauce. Mix everything well and we’re done!
