Stir-fry beef with vegetables

Today, we're making Beef Chop Suey, a delicious Chinese-American Takeout Classic featuring tender slices of beef stir-fried with a medley of fresh vegetables like broccoli, mushrooms, snow peas and beansprouts. This dish is perfect for using up any leftover vegetables you have at home, making it not only easy but also budget-friendly.
Quick and versatile, Beef Chop Suey pairs well with steamed rice or noodles, making it a comforting meal that brings a balance of protein, fiber, and flavor to the table. With minimal effort and no advanced cooking skills required, this stir-fry dish is packed with flavor and the goodness of fresh veggies. INGREDIENT LIST
BEEF MARINADE
Beef (eye fillet steak) - 250g
Shaoxing Wine - 1 tsp
Light Soy Sauce - 1 tsp
Sugar - 1 tsp
Baking Soda - 1 tsp
Corn Starch - 1 tsp
Sesame Oil - 1 tbsp
STIR-FRY SAUCE
Water - 1/2 cup
Light Soy Sauce - 1 tbsp
Dark Soy Sauce - 1/2 tbsp
Oyster Sauce - 2 tbsp
Sugar - 1/2 tbsp
Corn Starch - 1/2 tbsp
OTHER INGREDIENTS
Cooking Oil (Sesame oil or Vegetable oil) - 5 tbsp
Garlic - 4 cloves
Dried Shiitake Mushrooms (pre-soaked) - 3
Carrot - 80g +
Broccoli - 100g
Snow Peas - 100g
Onions - 80g
Water - 1/4 cup
Beansprouts - 80g
Instructions:
1. PREPARE THE INGREDIENTS
Start by soaking 3 dried Shiitake mushrooms in warm water until softened, then slice them thinly
Peel and finely chop 4 cloves of garlic
Cut 100g of broccoli into bite size pieces
Trim through ends of the snow peas (100g) and pull away the strings along their edges
Slice one carrot (80g) into thin rounds for quicker cooking and better texture
Slice half of an onion (80g) into 1cm pieces for a slightly chunky bite
2. PREPARE THE STIR-FRY SAUCE
In a small bowl, combine 1/2 cup of water, 1 tbsp of light soy sauce, 1/2 tbsp of dark soy sauce, 2 tbsp of oyster sauce, 1/2 tbsp of sugar and 1/2 tbsp of corn starch.
Mix everything together until well combined. Set the sauce aside for later.
3. PREPARE THE BEEF
Slice the eye fillet steak (or any preferred cut of steak) into thin pieces, cutting against the grain to keep the meat tender.
To marinate, mix the beef with 1 tsp of Shaoxing wine, 1 tsp of light soy sauce, 1 tsp of sugar and most importantly 1 tsp of baking soda and 1 tsp of corn starch which help tenderize the meat, creating the velvety texture when stir fried.
Then coat the beef with 1 tbsp of sesame oil to lock in the flavor.
Set the beef aside for 15 minutes.
4. STIR-FRY PROCESS
Begin by heating 2 tablespoons of oil in a large pan over medium heat. Add the pre-soaked shiitake mushrooms and stir-fry for 1 minute to release their flavor.
Next, add the broccoli and carrots to the pan, stir-frying for 2 minutes. Pour in 1/3 of the stir-fry sauce prepared earlier, mixing well to coat the vegetables. Add the snow peas and toss for 1 minute. Remove all the vegetables from the pan and set them aside on a plate.
In the same pan, using the leftover oil, add the onions and increase the heat to high. Toss the onions for about 1 minute until they start to char on the sides, then add the bean sprouts. Stir-fry the bean sprouts for no more than 30 seconds. Once done, transfer the onions and bean sprouts to the plate with the other vegetables and set aside.
In the same wok, add 3 tablespoons of oil. Once the oil is hot, add the beef. Spread the beef around in the pan and let it sear for 1 minute without touching. Then toss the beef for about another minute. Add garlic and stir-fry for 1 minute.
Then add ¼ cup of water and let it simmer until the water is cooked off. This process will make the beef even more tender. Once the water is cooked off and the beef starts to sizzle, add the stir-fry sauce.
Then add all of the vegetables that you put aside earlier and mix everything well to ensure that everything is coated in this delicious sauce. Do not mix for more than 30 seconds, we do not want to overcook the vegetables.
Then the dish is ready to be served.
