Stir-fry beef noodles with broccolini

Ingredients:
Thinly sliced steak 300g
Light soy sauce 2 tbsp
Dark Sou sauce 2 tbsp
Corn starch 1 tbsp
White pepper 1 tsp
Cooking oil spray
Broccolini 150g
Egg noodles 150g
Cooking oil 3 tbsp
Garlic 4 cloves
Grated Ginger 1 tsp
Pre soaked dry Chillis 7 (to taste)
STIR FRY SAUCE
Water 1/4 cup
Light soy sauce 3 tbsp
Dark soy sauce 2 tbsp
Sesame oil 1 tbs
Corn starch 1 tbs
White pepper 1 tsp
Instructions:
Thinly slice the beef (300g) against the grain.
Marinate the beef with light soy sauce (2 tbsp), dark soy sauce (2 tbsp), cornstarch (1 tbsp) and white pepper (1 tsp). Then leave it aside before we start the cooking process.
Boil some egg noodles (150g) on stove. When ready, take them out of the pot, drain them and leave them aside. Each brand or each type of noodle may be different so please follow package instructions for cooking the noodles
Blanche the broccolini (150g) in boiling water for about two minutes. Then rinse it under cold water or put it in a cold water bath to stop the cooking process and to keep the bright green color
Prepare other ingredients - finely chop some garlic (4 cloves), grate some ginger (1 tsp) and soak some dry chillis (to taste) in warm water
On high heat spray some cooking oil then add the beef when the pan is hot. Spread the beef in the pan to get maximum surface contact. Cook for about 1 minute on each side only because the beef is sliced very thinly
Remove beef from the pan and set it aside
Prepare the stir fry sauce ahead of the cooking process. Mix some water like soy sauce (3 tbsp), dark soy sauce (2 tbsp) sesame oil (1 tbsp) and cornstarch (1 tbsp). Mix it well and leave it aside
Add 3 tbsp of cooking oil into the pan or a wok on medium heat.
Saute chopped garlic cloves (4 cloves) and minced ginger (1 tsp) for about 30 seconds.
Add pre-soaked dried chilies ( I am putting 7 chillis) and stir for about 30 seconds. The amount of chilies would depend on your taste.
Add noodles and stir it well to coat the noodles in chili garlic ginger oil.
Then add broccolini, followed by beef and pour the sauce over it
Mix everything for about 1-2 minutes until all the ingredients are coated in the delicious sauce
Then take it off the stove and serve!
