INGREDIENTS

Chicken Breast - 300g

Fish Sauce - 1/2 tbsp

White Peppers - 1/2 tbsp

Egg Noodles - 200g (dry)

Shallots - 1 (small)

Chillis - 3 hot, 1 mild

Garlic - 4 cloves

Green Beans - 180g

Cooking Oil - 2 tbsp

Thai Basil - 30g

STIR FRY SAUCE

Light Soy Sauce - 1 tbsp

Sweet Soy Sauce - 1 tbsp

Fish Sauce - 1 tbsp

Oyster Sauce - 1 tbsp

Marinate chicken with fish sauce and white pepper

Stir Fry Sauce made with light soy sauce, sweet soy sauce, fish sauce and oyster sauce

Thai Basil leaves are the star of this dish

All done with a fried egg on top!

Instructions:

Prep the Chicken:

Cut 300g of chicken breast into bite-sized pieces. Marinate the chicken with ½ tablespoon of fish sauce and ½ tablespoon of white pepper. Set it aside to absorb the flavors.

Prepare the Aromatics:

Finely chop your chilies, garlic, and shallots—this will form the flavorful base of the dish.

Prep the Vegetables:

Slice 180g of green beans or snake beans into 1-inch pieces.

Cook the Noodles:

Boil dry egg noodles for about 10-12 minutes, following the package instructions. Once done, drain and rinse the noodles under cold water to stop the cooking process, then set them aside.

Make the Stir-Fry Sauce:

In a small bowl, mix together light soy sauce, sweet soy sauce, fish sauce, and oyster sauce. Set this sauce mixture aside for later.

STIR FRY PROCESS

1. Cook the Chicken: Heat 2 tablespoons of cooking oil in a wok over medium heat. Stir-fry the marinated chicken for about 3 minutes or until it's 80% cooked. Remove the chicken from the wok and set it aside.

2. Sauté the Aromatics: In the same wok, add the chopped chilies, garlic, and shallots. Sauté for about 2 minutes until fragrant.

3. Cook the Green Beans: Add the green beans to the wok and stir-fry for another 2 minutes.

4. Combine Everything: Return the partially cooked chicken to the wok and stir-fry for another 2 minutes.

5. Add the Noodles and Sauce: Add the cooked noodles to the wok, then pour in the prepared sauce. Toss everything together for about a minute until well combined.

6. Finish with Basil: Finally, add a handful of fresh basil leaves to the wok and give it a quick stir. Once the basil wilts slightly, the dish is ready to serve!
