Prawns and Broccoli in garlic sauce

Ingredients:
PRAWN MARINADE
Prawns - 250g (shells removed)
Salt - 1 tsp
White Pepper - 1 tsp
Corn Starch - 1 tbsp
Sesame Oil - 1 tbsp
STIR FRY SAUCE
Chicken Stock - 1/2 cup
Soy Sauce - 1 tbsp
Oyster Sauce - 2 tbsp
Sugar - 1/2 tbsp
White Pepper - 1/2 tbsp
Corn Starch - 1 tbsp
OTHER
Broccoli - 350g
Garlic - 30g
Carrot - 70g
Cooking Oil - 3 tbsp
Instructions:
PREPARE INGEDIENTS
Mince 30g of garlic
Cut 350g of Broccoli into bite size pieces
Slice 70g of carrots
STIR FRY PROCESS
Let's start with the prawns that have been shelled and de-veined. Marinade the prawn with Salt (1 tsp), White Pepper ( 1 tsp) and Corn Starch (1 tbsp). Mix well, then add 1 tbsp of Sesame Oil to lock in the flavor and keep the prawns moist.
Then prepare the broccoli by putting 2 ltr of water in a pot or a pan and bring it to a boil Add broccoli into the boiling water and remove after 1-2 minutes Add broccoli straight into cold or iced water to keep them green and crisp
Now we can start the cooking process by adding 3 tbsp of cooking oil to a wok or a pan. Add Garlic to the wok and fry for about 2 minutes or until golden brown. Remember to keep stirring.
Once they turn golden, remove 3/4 of the garlic and put them onto paper towel to drain the oil and let dry. This makes these garlic chips crispy! (We will use them later)
Add prawns into the wok and sauté for 2 minutes (50% cooked)
Add carrots to the wok and stir for 30 seconds
Add broccoli and continue to sauté for 1 minute
Then add the sauce and mix everything well for about 1-2 minutes until the sauce thickens
Add 1 tsp of white pepper, mix well and take it off the stove.
Sprinkle the crispy garlic chips and enjoy!
