Coconut Mango Sago Dessert

Sago (tapioca pearls) - 1 cup

Coconut milk - 1 can

Vegan Sweet Condensed Coconut Milk - 1/2 cup, OR

Sweetened Condensed Milk (dairy) - 1/2 cup

Fresh ripe mango - 2 medium size

COOKING INSTRUCTIONS:

Prepare the Mango Purée:

  • Peel and slice two ripe mangoes. Scoop out the flesh and transfer it to a blender.

  • Add ½ cup of sweetened condensed milk (or sweetened condensed coconut milk for a vegan option).

  • Blend the mixture until smooth and creamy. Set aside.

    Cook the tapioca pearls:

  • On a stovetop, bring 1.5 to 2 liters of water to a boil.

  • Add 1 cup of tapioca pearls and boil for 10 minutes, stirring occasionally to prevent them from sticking.

  • After 10 minutes, most of the white centers in the pearls should be gone.

  • Turn off the heat, cover the pot, and let the tapioca rest for 15 minutes until the pearls become completely translucent.

  • Drain the cooked tapioca pearls and rinse them under cold water to remove excess starch.

  • Drain off the cold water completely.

  • Transfer the tapioca pearls to a bowl and mix them with 1 cup of coconut cream until well combined.

Assemble the Dessert:

  • In a serving bowl, add the tapioca pearls mixed with coconut cream.

  • Pour in the mango purée you prepared earlier and gently mix it together.

  • Top with a drizzle of additional coconut cream and fresh mango chunks for extra flavor and texture.
