Braised Tofu with Shiitake mushrooms and fresh Bok Choy in delicious sauce - 20 minute vegan recipe

Instructions:

  1. Soak dehydrated Shiitake mushrooms in warm water for about 1 hour before the cooking process

  2. After one hour, mushrooms should be rehydrated and soft. At that time, cut the mushrooms into thin slices if they are large. If mushrooms are small, simply cut out the hard stem in the middle and use them whole.

  3. Prepare other ingredients

    • mince the garlic

    • Mince or grate the ginger (or use ready-made grated ginger tubes)

    • cut scallions and separate the white and green parts

  4. Prepare the stir-fry sauce with vegetable stock or broth, light soy sauce, dark soy sauce, sesame oil, corn starch and white pepper.

  5. Cut firm tofu into bite size pieces

  6. Season the tofu with salt and garlic powder, then coat in corn starch

  7. Shallow fry tofu pieces in a wok for a few minutes until the color turns golden, then take them out of the wok and put aside

  8. In the same wok, add some oil and saute garlice, ginger and white parts of scallions for 30 seconds

  9. Add pre-soaked Shiitake mushrooms and continue to sauté for 1 minute

  10. Add Baby Bok Choy, and mix everything well

  11. Add half of the sauce and give it a quick stir so everything is coated in the sauce

  12. Cover the wok and simmer for 2 minutes

  13. Then remove the cover, add fried tofu into the wok, and pour in the rest of the sauce

  14. Cover the wok again, and simmer for 2 minutes

  15. Then turn off the stove, remove the cover, and sprinkle with the green part of scallions

  16. The dish is now ready to serve - enjoy!
