INGREDIENTS

Cod Fish - 300g

Cornstarch - 1/2 cup

Bell Peppers - 50g

Cherry Tomatoes - 300g

Shallots -50g

Garlic - 25g

Parsley - 10g

Cooking Oil - 5-6 tbsp

Butter - 40g

Water - 1 cup

Salt - 1 tsp (or to taste)

Pepper - 1 tsp (or to taste)

Paprika - 1/2 tsp (or to taste)

Lime juice - 1/2 tbsp (or to taste)

INSTRUCTIONS

Prepare the ingredients:

  • Mince 25g of garlic

  • Finely chop some shallots or onions (50g)

  • Finely chop some parsley (10g)

  • Dice some bell peppers (50g)

Prepare the fish:

  • Pat dry 300g of cod fish fillets with paper towels. You can use any other type of white fish. Then season with salt (1/2 tsp), pepper (1/2 tsp) and paprika (1/2 tsp).

  • Coat the fish pieces in cornstarch and tap off the excess cornstarch.

  • Heat 5-6 tbsp of cooking oil in a shallow pan and sauté the fish pieces for about 2-3 minutes or until they are about 80% cooked.

  • Then take them out of the pan and set aside.

Cooking process:

  • Remove most of the oil from the pan, leaving about 2-3 tablespoon of leftover oil

  • Sauté garlic and shallots for about 30 seconds

  • Add butter, and continue to sauté for 1 minute

  • Add bell peppers and continue to saute for 1 minute

  • Add cherry tomatoes and parsley and mix everything well

  • Add 1 cup of water and season with some salt and pepper (to taste)

  • Simmer for 3 minutes or until tomatoes are soft

  • Brighten up the dish with some lime juice (to taste) and mix every well

  • Add the fish pieces back into the pan and let them cook for another 1-2 minutes until the fish is cooked through

  • Top with some fresh parsley, and we’re done!
