COOKING INSTRUCTIONS:

Prepare the Strawberry Purée:

  • Cut strawberries (350g) in half and put them in a blender or food processor

  • Add 1 cup of sweetened condensed milk (or sweetened condensed coconut milk) and 1 cup of evaporated milk (or evaporated coconut milk). You can adjust the taste to your liking by putting less sweetened condensed milk.

  • Blend the mixture until smooth and creamy. Set aside.

    Cook the tapioca pearls:

  • On a stovetop, bring 1.5 to 2 liters of water to a boil.

  • Add 1 cup of tapioca pearls and boil for 10 minutes, stirring occasionally to prevent them from sticking.

  • After 10 minutes, most of the white centers in the pearls should be gone.

  • Turn off the heat, cover the pot, and let the tapioca rest for 15 minutes until the pearls become completely translucent.

  • Drain the cooked tapioca pearls and rinse them under cold water to remove excess starch.

  • Drain off the cold water completely.

  • Transfer the tapioca pearls to a bowl and mix them with 1 cup of coconut cream until well combined.

Assemble the Dessert:

  • In a serving bowl, or in individual serving cups, mix tapioca pearls, evaporated milk (or evaporated coconut milk), and strawberry cream

  • Top with diced fresh strawberries

  • Stir, serve, and enjoy this refreshing Dessert!
