Easy Homemade Soy Sauce Chicken
Today we are making easy and delicious Soy Sauce Chicken!
This recipe is perfect for beginners! With just a few simple ingredients, you can make tender, juicy chicken coated in a rich, savory-sweet soy glaze. No oven or special skills needed—just a pot and pantry staples!
INGREDIENTS
Chicken Thigh - 750g (with bones)
Sweet Soy Sauce - 2 tbsp
BRAISING LIQUID
Brown Sugar - 2 tbsp (you can use white sugar too)
Water - 750ml (enough to cover the chicken pieces)
Garlic - 6 cloves
Ginger - 4-5 slices (25g)
Scallions - 25g
Sweet Soy Sauce - 2 tbsp
Light Soy Sauce - 4 tbsp (or to taste)
Shaoxing Wine - 4 tbsp (or to taste)
Salt - 1.5 tsp (or to taste)
Corn Starch - 1.5 tbsp

COOKING INSTRUCTIONS
Preparing the chicken
Dry the chicken thigh pieces with paper towels to remove excess water
Marinade the chicken with 2 tablespoons of sweet soy sauce for extra flavor and color
Preparing the Cornstarch Slurry
In a small bowl, add 1.5 tablespoons of cornstarch and 2 tablespoons of water. Mix well and set aside.
Preparing the braising liquid
In a large pot or a work, add 2 tablespoons of brown (or white) sugar and 2 tablespoons of water. Slowly bring it to a simmer on low-medium heat until the sugar caramelizes.
Simmer for about 4-5 minutes or until it turns into golden brown color with syrupy consistency. It can take a few minutes longer for white sugar.
Add 750ml of water (enough to cover the chicken pieces) and continue to simmer.
Add the aromatics - 6 cloves of garlic, 4-5 slices of ginger, 25g of scallions.
Then add the flavoring sauces - 2 tablespoons of sweet soy sauce, 4 tablespoons of light soy sauce, 4 tablespoons of Shaoxing wine and 1.5 teaspoons of salt. Adjust the taste to your liking.
Slowly bing it to a boil, then add chicken pieces. Cover and simmer for 20-30 minutes depending on the size of the chicken thigh pieces. During this process, check to ensure that chicken pieces are cooked through
When ready, take chicken pieces out of the pan and leave them aside. Remove the bits and pieces from the pan and continue to simmer the sauce
Once the sauce reduces to about half, check the taste and adjust it if necessary. Then add the cornstarch slurry and stir gradually until the sauce thickens to desired consistency. This can take a 3-5 minutes.
Pour the sauce over the braised chicken and we’re done!
