Beef Chow Mein - Stir Fry Noodles with Beef
Easy homemade Chinese style stir-fry beef noodles
Beef Chow Mein is a classic Chinese stir-fried noodle dish made with thin egg noodles, beef, and vegetables in a savory sauce. In this recipe, I am making this delicious stir-fry beef noodles dish at home with minimal ingredients, making it budget friendly.
I am using eye fillet steak for this recipe, simply because they were on sale at our local supermarket, but you can use any cut of meat that is available to you. I am marinading the beef with baking soda, which tenderizes the beef, and cornstarch to give it that velvety texture.
INGREDIENTS
Eye fillet steak - 250g
Light Soy Sauce - 1 tbsp
Shaoxing Wine - 1/2 tbsp
Cornstarch - 1/2 tbsp
Baking Soda - 1/2 tsp
Sesame Oil - 1 tbsp
Egg Noodles - 400g
Cooking oil - 2 1/2 tbsp
Onion - 100g
Bell Peppers - 100g
Scallions - 20g
Garlic - 5 cloves
STIR FRY SAUCE
Light Soy Sauce - 2 tbsp
Sweet Soy Sauce - 1 tbsp
Shaoxing Wine - 1/2 tbsp
Water - 2 tbsp
Cornstarch - 1 tbsp
White Pepper - 1 tsp

COOKING INSTRUCTIONS
PREPARE INGREDIENTS
Slice one onion (100g)
Slice some red peppers (100g)
Chop some scallions (20g)
Mince 5 cloves of garlic
(You can use any other vegetables that you have in your fridge)
STIR FRY SAUCE
In a small bowl, mix light soy sauce (2 tbsp), sweet soy sauce (1 tbsp), Water (2 tbsp), Shaoxing Wine (1/2 tbsp), white pepper (1 tsp) and cornstarch (1 tbsp)
stir it well and leave it aside.
BEEF
Thinly slice the beef (250g) against the grain. I am using eye fillet steak, but any cut of beef is fine as long as you tenderize the beef as per the recipe.
Marinate the beef with 1 tbsp of light soy sauce and 1/2 tbsp of Shaoxing wine. Then add 1/2 tsp of baking soda to tenderize the beef. It can produce a weird taste so make sure that you only put a little. Then add 1/2 tbsp of cornstarch to give it that velvety texture.
Lock the flavor in by coating the beef with 1 tbsp of sesame oil
EGG NOODLES
I am using fresh (not dry or frozen) egg noodles, also known as Hokkian noodles.
Cook them in boiling water for about 1-2 minutes to loosen the noodles. Remember noodles are already cooked, so if you cook them for too long, they will get soggy.
Draing the water and rinse them under cold water to avoid clumping.
Set the noodles aside to drain the excess water
STIR FRY PROCESS
Heat 1/2 tbsp of cooking oil in a large wok on high heat.
Add onions and red peppers, then saute for 4-5 minutes. Once they are cooked, remove them from the wok and set aside.
In the same wok (do not add more oil), add the marinated beef. Spread the beef in the work, and let is sear without touching for 2 minutes. Then stir-fry for another 1-2 minutes. Remove the beef from the wok and set aside.
Add 2 tbsp of cooking oil to the wok and sauté the garlic for 2 minutes.
Add noodles and stir well to coat noodles in the garlic oil. Then spread the noodles and let them sear for 2 minutes.
Add half of the stir fry sauce that we prepared earlier and mix well with the noodles. This process ensures that noodles are full of flavour.
Add beef and the rest of the sauce. Give it a quick toss to ensure that everything is mixed well.
Add onions, red peppers and scallions to the work. Mix everything well for 1-2 minutes.
