Easy Homemade Stir Fry Noodles with ground beef, King Oyster Mushrooms and Bok Choy

Today I am sharing a super easy and delicious stir-fry recipe featuring ground beef, king oyster mushrooms, and bok choy with hand-pulled noodles. This quick meal takes only 20 minutes to whip up, making it perfect for busy weeknights or when you need something fast but satisfying.

The sauce is simple, using just a few pantry staples like light soy sauce, sweet soy sauce, sesame oil, and a touch of white pepper. The combination of tender mushrooms, juicy beef, and fresh bok choy makes this dish flavorful and wholesome.

Ingredients:

Ground Beef - 250g

King Oyster Mushrooms - 200g

Bok Choy - 3 bunches

Birdseye Chillis - 4 (hot)

Frozen Hand-pulled Noodles - 350g

Scallions - 45g

Garlic - 5 cloves

Water - 1/2 cup

Cooking Oil - 3 tbsp

SAUCE

Light Soy sauce - 2 tbsp

Sweet soy sauce - 2 tbsp

Sesame Oil - 1 tbsp

Chilli Sauce - 2 tbsp

White pepper - 1/2 tbsp

Instructions:

1. PREPARE THE INGREDIENTS

  • Start by slicing the king oyster mushrooms into thin pieces.

  • Cut the scallions into small pieces, making sure to separate the white and green parts.

  • Mince 5 cloves of garlic for added aroma.

  • Finely chop the bird's eye chilies (adjust the amount depending on your spice level).

2. PREPARE THE STIR-FRY SAUCE

  • In a small bowl, combine light soy sauce, sweet soy sauce, chili sauce, sesame oil, and a pinch of white pepper.

  • Mix everything together until well combined. Set the sauce aside for later.

3. COOK THE NOODLES

  • Boil the Shanxi pull noodles for 8 minutes. You can use any of your favourite noodles and follow package instructions.

  • Then drain and rinse them under cold water to stop the cooking process.

4. STIR-FRY PROCESS

  • Heat 3 tbsp of oil in a large pan or wok over medium-high heat.

  • Add the garlic and sauté for 30 seconds. Then add white part of scallions and continue to sauté for 30-45 seconds. Add chillis and sauté until they are golden.

  • Add the ground beef, breaking it up as it cooks, and stir-fry until browned (about 2 minutes).

  • Toss in the sliced king oyster mushrooms and stir-fry for 1 minute before adding the sauce.

  • Pour in the stir-fry sauce you prepared earlier. Toss everything together so that the beef and mushrooms are evenly coated.

  • Add 1/2 cup of water, cover and simmer for 2-3 minutes

  • Add noodles and mix everything well.

  • Garnish with the green part of scallions

  • Now the dish is ready to serve!
