Homemade Singapore Chilli Fish

I am using cod fish here, but you can also use barramundi or any other type of white fish

This dish packs the same punchy, tangy, and sweet flavors you’d find in a Singapore seafood restaurant, but they’re ready in under 20 minutes! Perfect for busy nights, this beginner-friendly recipe is a crowd-pleaser that the whole family will love.

Ingredients:

INGREDIENTS

Cod Fish - 400g (or Barramundi)

Shallots - 100g

Garlic - 4 cloves

Ginger - 1/2 inch

Egg - 1

SAUCE

Chicken Stock - 1 cup

Water - 1/2 cup

Tomato Ketchup - 4 tbsp

Soybean Paste- 1 tbsp

Fish Sauce - 1 tbsp

Sugar - 1 tbsp

Corn Starch - 1 tbsp

INSTRUCTIONS

PREPARE INGREDIENTS

  1. In the food processor, finely chop the following ingredients - 2 mild chillis, 2 hot chillis, 3 shallots, 4 cloves of garlic and 1/4 inch of ginger. You can also use mortar and pestle.

  2. Cut the cod fish into desired size

  3. Beat one egg

PREPARE THE SINGAPORE CHILLI SAUCE

  • Mix the following ingredients in a bowl or a jar - Chicken Stock (1 cup), Water (1/2 cup), Tomato Ketchup (4 tbsp),

    Soybean Sauce (1 tbsp), Fish Sauce (1 tbsp), Sugar (1 tbsp), and Corn Starch (1 tbsp)

COOKING PROCESS

  1. Add 5 tbsp of cooking oil into a wok then sauté the chilli mixture for about 5 minutes or until everything is softened.

  2. Add the sauce and slowly bring it to a simmer while stirring.

  3. Once the sauce simmers, add fish pieces. Then cover the wok for 2 minutes.

  4. After 2 minutes, turn the fish pieces, put the cover back on, and continue cooking for 3 more minutes. (cook longer if your fish pieces are larger)

  5. Remove fish from the wok and set aside.

  6. Add the egg and stir until the sauce thickens.

  7. Once the sauce thickens, you can either add the fish pieces back into the sauce or pour the sauce over the fish and serve.

  8. EXTRA STEP - Fry some frozen mantou to mop up that delicious sauce!
