Braised Tofu with Shiitake mushrooms and Bok Choy

Want something simple and easy but also nutritious? We are braising Tofu in flavorful sauce, pairing with Shiitake Mushrooms and fresh Baby Bok Choy. Deliciously flavored Tofu with umami of Shiitake Mushrooms and bright fresh vegetables really makes this a family favorite. The best thing is that this can be done in just under 20 minutes!

Ingredients:
Tofu Preparation
Firm Tofu – 350g
Corn Starch – 3 tbs
Salt – 2 tsp
Garlic powder – 2 tsp
Cooking oil (sunflower oil, canola oil, vegetable oil, peanut oil ) - 3 tbsp
Stir Fry Sauce
Vegetable Stock or broth - 1 cup
Light Soy Sauce - 3 tbsp
Dark Soy Sauce - 2 tbsp
Sesame Oil - 1 tbsp
Corn starch - 1 tbsp
White Pepper – 1 tsp
Other
Oil - leftover oil from frying the tofu
Garlic - 5 cloves
Grated Ginger - 1 tsp
White part of scallions - 10g
Pre-soaked Shiitake mushrooms - 80g
Baby Bok Choy - 150g
Green part of scallions - 8g
Instructions:
Soak dehydrated Shiitake mushrooms in warm water for about 1 hour before the cooking process
After one hour, mushrooms should be rehydrated and soft. At that time, cut the mushrooms into thin slices if they are large. If mushrooms are small, simply cut out the hard stem in the middle and use them whole.
Prepare other ingredients
mince the garlic
Mince or grate the ginger (or use ready-made grated ginger tubes)
cut scallions and separate the white and green parts
Prepare the stir-fry sauce with vegetable stock or broth, light soy sauce, dark soy sauce, sesame oil, corn starch and white pepper.
Cut firm tofu into bite size pieces
Season the tofu with salt and garlic powder, then coat in corn starch
Shallow fry tofu pieces in a wok for a few minutes until the color turns golden, then take them out of the wok and put aside
In the same wok, add some oil and saute garlice, ginger and white parts of scallions for 30 seconds
Add pre-soaked Shiitake mushrooms and continue to sauté for 1 minute
Add Baby Bok Choy, and mix everything well
Add half of the sauce and give it a quick stir so everything is coated in the sauce
Cover the wok and simmer for 2 minutes
Then remove the cover, add fried tofu into the wok, and pour in the rest of the sauce
Cover the wok again, and simmer for 2 minutes
Then turn off the stove, remove the cover, and sprinkle with the green part of scallions
The dish is now ready to serve - enjoy!
