Braised Tofu with Shiitake Mushrooms and Bok Choy
Vegan braised Tofu with mushrooms and bok choy
Craving a quick, easy, and tasty vegan meal? This braised tofu with shiitake mushrooms and fresh bok choy is just what you need! Perfect for beginners or busy days, it’s ready in under 20 minutes and made in one pan. Packed with flavor, nutrients, and simple, wholesome ingredients.
INGREDIENTS
Medium Firm Tofu - 350g
Dried Shiitake Mushrooms - 6 pieces
Bok Choy - 200g
Garlic - 5 cloves
Sesame Seeds - 1/2 tbsp
Sunflower Oil - 1/4 cup (Vegetable/ Peanut / Canola Oil can be substituted, no oilive oil)
BRAISING LIQUID
Vegetable or Chicken Stock - 1.5 cup
Light Soy Sauce - 2 tbsp
Sweet Soy Sauce - 1 tbsp
Sesame Oil - 1 tbsp
Sugar - 1/2 tbsp
SLURRY:
Corn Starch - 1 tbsp
Water - 3 tbsp
Medium Firm Tofu
Braising Liquid
Frying the tofu
Shiitake mushrooms in garlic oil
Adding braising liquid
Brining it all together
Ready to serve!
Instructions:
Prepare the ingredients:
Soak 5-6 dried Shiitake Mushrooms in warm water for about 1 hour ahead of the cooking process
Mince 5 cloves of garlic
Clean and cut bok coy into desired size
Making the braising liquid:
In a small bowl, mix 1.5 cup of Vegetable or Chicken Stock, 2 tbsp of Light Soy Sauce, 1 tbsp of Sweet Soy Sauce, 1 tbsp of Sesame Oil and 1/2 tbsp of sugar. You can adjust the taste to your liking.
Mix it well and set aside.
Making the slurry:
In a small bowl, mix 1 tbsp of corn starch and 3 tbsp of water
Mix well and set aside
Preparing the Tofu
Pat dry some medium firm tofu (350g) with a kitchen towel or paper towels to remove excess water
Cut tofu into thin slices
Heat 1/4 cup of cooking oil in a pan, and fry the tofu until golden. This takes about 3-4 minutes.
Take the tofu out of the pan and leave it aside. Put them on some paper towels to drain the excess oil.
Putting everything together:
Remove half of the oil from the same pan that we used to fry the tofu.
Sauté the minced garlic for about 1 minute.
Add the pre-soaked, and sliced Shiitake mushrooms and continue to sauté for another 1-2 minutes
Then add the tofu back into the pan and mix everything well
Pour the braising liquid into the pan, cover and simmer for 5 minutes on low-medium heat.
Remove the cover, then add bok choy. Push down the bok choy so that the hard stems are submerged in the braising liquid. Then cover and simmer for 5 more minutes.
After 5 minutes, remove the cover completely, and add the slurry. Stir lightly to mix everything.
Once the sauce starts to thicken, top with 1/2tbsp of sesame seeds
Give it a quick toss, and we’re done!
